As a trip manager and guide for Trek Travel, a multi-day cycling tour company, I have had the opportunity to work with Blake, Jen, and the wonderful staff of the Hell’s Backbone Grill for three seasons. My experiences at this truly special restaurant shine as bright spots in my memories as a tour leader and as a traveler. A visit to the Hell’s Backbone transcends mere dining experience—the food is fantastic, but what makes the success of Blake and Jen’s vision complete is the sense of genuine nourishment they are able to provide in the stunningly beautiful, yet undeniably harsh landscape surrounding Boulder, Utah. The love and respect for all fellow creatures and the spirit of healthful joy that are fostered here seep out of everything and settle peacefully into each traveler as they listen to the laughter of friends, savor the sweet evening breeze on the porch, and enjoy the delicious meals prepared in the bustling kitchen.
A major goal of this unique restaurant is sustainability, achieved in both a physical and spiritual sense. While their business practices focus on using resources that can be replaced in a harmless way, Blake and Jen are also well practiced in the art of providing true sustenance to their guests. Hell’s Backbone Grill is a circle of warm, welcoming light in the desert and upon leaving, I find myself nourished, sustained, and loved.
