Indigo Pickles ~ Rajasthani Pickled Onions
Indigo Pickles is a project of longtime, beloved Hellion, Lacy. You may recognize her from the dining room or from Little Bone, our new food truck on the grounds of Boulder Mountain Lodge. Indigo Pickles is the thread continuing from Lacy’s time at Wild Indigo, and her interest in Indian food & spices. The spices used in Indigo Pickles are ethically sourced from Rajasthan, India and infused in pickled vegetables and jams here in Boulder, Utah.
Ingredients: onions, water, apple cider vinegar & Redmond Real salt, spicy masala. Rajasthani chili powder.
